What do I do when Life hands me leftover gochujang chicken thighs? Make a bastardized jambalaya using them! I had all of the other ingredients necessary to make jambalaya, so it was just a matter of adjusting the cooking time to account for fully-cooked chicken instead of raw chicken. And you know what? It worked! (I’m also missing a chunk of my thumb due to poor knife skills. This is your reminder to be better than me.)

And then yesterday morning, after putting the corned beef into the crockpot, I made chicken and waffles using the last of my gochujang chicken thighs and some bacon I cooked earlier.

I would have ridden a bicycle to the mushroom market at Wild Heaven west side yesterday, but the goddamn Beltline is still closed west of Boulevard. I might start calling it the Beltlie from here on out. After meeting some friends at Holy Taco for brunch I decided not to drive to Wild Heaven either since I didn’t want to spend any more money.

My corned beef and cabbage dinner last night was great. I used WLF onions in the crockpot, and then on a whim I baked rolls to go with the beef, onions, carrots, cabbage, and potatoes.

Wordle: five, my starter was STAGE. I think my Wordle play is getting worse!

    A great weekend of riding. Saturday, I followed a provided off road (some) route that got to a point where the map said one thing and the roads something else. I finally started doing my own ride and stopped at Neels Gap for a snack. Looking back at the route, I was able to pick it back up North of the gap and did so. 2 stream crossings- the second one almost taking me for a swim! All beautiful roads and great fun.

    Sunday, picked up 2 more churches and learned you can’t trust the GAIA app. I approached the first church from the north and found the turn that would lead me there, but it was a closed gate and private land! Oops. Circled around and got it easily from the south and saw the road leading north. More like hash potential than scooter.

    Ordered a new tank bag and inflatable pillow last night!

    Nice and quiet weekend. The best part about it was that Finn’s baseball game was cancelled Saturday morning. It didn’t actually rain where we were, but it looked really ominous at 8:00 am when they had to make the call. Otherwise we went out to lunch and watched baseball. Yesterday I made a very nice roast chicken as well as a loaf of banana bread.

    busy weekend –
    went to a little wine tasting at Sherlock’s Buckhead – winemakers were there – very tasty wine – I decided to buy a $60 bottle (and I wasn’t even drunk)

    Went to Hiawassee for an overnight Saturday. Afternoon beer & food at Hiawassee Brew – Brint was in town, so he met up with us.
    Watched the Derby – I actually picked the winner.
    Played some mexican train – Laurie had never played – Allan got the best tiles – he won.

    Sunday – hiked a little at Jackrabbit Mtn – they have a lot of really nice signs to tell you what the different trees and plants are – that I’ve never seen while riding up there.

    On the drive home, stopped at Bear Claw winery (just an average GA winery) then went to Roo Winery. That place is lovely & bougie. Whoever owns it has LOTS of money – what a place.
    Then – because we were feeling crazy – stopped at Schoolhouse right before they closed for a “punch” for the May special. I’m going to try for 6 punches – why not get a Schoolhouse tshirt.

  5. I just finished a “purposeful walk”, or what some people would call “lawn mowing”. My “lawn” doesn’t look good, but it looks less shitty.

  6. Though well behind giving that it’s already May, I continue to repot small seedlings of tomato and pepper plants in an effort not to have a massive failure in WLF this year.
