Instead of cooking a recipe from a book last night, I cooked one from a website — Stick of Butter Chicken. It was really good, but made far too much for a singleton. If/When I make this again I will cut the recipe in half.
Lunch and dinner will be made up of meals (leftovers) currently living in my refrigerator.
Because I couldn’t find a recipe for French Toast in any of the five cookbooks I had nearby, this might I made waffles for breakfast from the waffle recipe found in “When Southern Women Cook” by America’s Test Kitchen.

Post Breakfast Update:
My waffles were great, if not a touch too sweet. I left the batter out overnight to ferment and was not disappointed as in addition to sweetness, the waffles had a slight funk, which I loved. The batter made sixteen waffles, so I have enough for future breakfasts and perhaps a dinner of chicken and waffles one night.
I’m at about 95% healthy today. After 2.5 days of downtime I will want to push myself, but not sure how much I should.
we have never used a recipe for french toast – just whisk some eggs, with some cinnamon & nutmeg.
We do not have a waffle maker – but I do like waffles (hence, occasionally a trip to Waffle House happens – I do like pecan waffles)

you made me look up french toast recipes – people do use more ingredients that we do – maybe we will try using a recipe someday!
Wordle in 2 today. For anyone wishing to follow along at home, I had no matches with DETER and then 5 greens on my second try. It looked like half of a mint Oreo cookie. I’ve never gone from zero to hero in two.

Started working on the re-jiggered fence line at the barn. Tanner was a brat and pulled up the marking flags I had put out for the posts. That got him banished to as adjacent pasture without a water tank. F’er. Tomorrow will be adjusting one post and maybe some board work.
Today is an overdue haircut and a physical. Attempting to find an electrician that can check our transfer switch and provide a connection for the portable generator we bought. Still searching.

A very nice long weekend just being adults. Lots of rest and football. We went out to lunch every day but otherwise hung out at home. Patriots game was good because the Texans never really got going, but next weekend will be much tougher.
Yesterday I made cassoulet in the crockpot which I will eat for lunch all week. This batch is pretty delish, if I do say so myself.
And as we binged mindless TV last night, I finally remembered there was a little college football going on. We watched the last half of the 4th quarter. I didn’t have a dog in the fight, but was kinda pulling for Miami. Oh well.
I always root against Florida, but I didn’t care enough about the game to stay up til the end. I did watch until halftime.
why Miami? Why not get on the Indiana bandwagon?
I didn’t care either -but was happy to see a midwest team win.
I didn’t watch until the very end – as I too was watching mindless TV all evening.
Miami is ACC, so there’s that. And there’s my connection to the city of Miami through a certain FRB office. And nothing against Indiana, but when given a choice, I always root for an underdog.

Worked way too hard yesterday- today should be better, Mondays always suck.
I will get out for lunch today – that is my goal.
MLK day was pretty chill yesterday, we should have volunteered somewhere but didn’t. Ended up going for a hike along the Chattahoochee at Jones Bridge park then not much else.
Kitchen project is going along well, today they will paint the walls then continue laying tile. I expect tile to be done and grouted this week, if the planets align we may even get cabinets. Who knows.
Funny story, yesterday I asked the contractor how to pay him. He looked at me funny and said “write a check or pay cash”. I was looking for some sort of electronic means but he is old school like that. I have not written a check in years, it has been so long that we ran out of checks years ago and never got more. I guess I need to go to the bank and have a check drawn.
I could deal with old school… I worked with a guy who had never written a check. I just can’t quite imagine.
My co-worker in the next office to me is our senior accountant and he is responsible for accepting the money from students for various travel seminars. Emory doesn’t accept apps, obviously, so they have to write a check. Every once in a while I listen to my co-worker teach a student how to write a check. Once of them signed the “To:” line.
