I made “Hoisin-Glazed Baby Back Ribs” from “Milk Street Instant Pot” by Christopher Kimball for dinner on Friday. Unfortunately there was a bit of a cock up because the recipe didn’t specify a cup of water in the ingredients list, and I missed this addition in the directions. The end result was fantastic, but boy howdy did this preparation make a hell of a mess, made even worse when the liquid left over in the Instant Pot bowl spilled everywhere as I tried to clean it out. I will be doing this again in the near future, trying a different sauce, or maybe a dry rub?
Saturday’s dinner was “Chicken and Smoked Sausage Gumbo” from “Louisiana Real & Rustic” by Emeril Lagasse. As I mentioned Friday it’s been decades since I made this, and the four hours it took to cook Saturday’s dinner reminded me why. Holy crap did I do a fantastic job! My dish was also improved with the addition of frozen WLF okra.
I had intended to make a soup for dinner last night, but decided to eat leftovers instead.
Tonight’s recipe will be “Drunken Noodles with Chicken” from “The Complete Cooking for Two” by America’s Test Kitchen.

Saturday evening I was on the trainer when Debbie said we won the auction. Unfortunately, he had to be picked up by 11 am Sunday- in Ocala! Well, she offered to go down alone and leave me to care for the children and I took that deal. She drove as far as Valdosta and got up just in time to complete the purchase and bring Henry home.
In preparation for camping this weekend, I spent last night in the unheated mancave (in my tent). I need to get a better air mattress, but other than that my 40 year old (+) down bag worked well.
And on the way home from WH breakfast yesterday, I got my car washed. Been too long. I even vacuumed and cleaned windows when I got home.

I’ve finished watching “Celebrity Traitors”. I need to find a new reward for riding my trainer.
I’ve also baked another underwhelming loaf of bread. I need to get a new recipe, or figure out where I am going wrong. I really want to bake the type of bread which pleases me.

My car’s infotainment system healed itself! I got in the car to go home from work on Friday and it just worked like nothing had happened! Maybe it needed a vacation, too?
We watched a lot of football and got mani-pedis. Yesterday I made pigs in blankets and a scalloped potato with cheese in the crockpot. Barb, the recipe was so good that Kevin had three servings and then every time he went to the kitchen after that he took another bite. Then he said to me, “I might actually die from eating this but I can’t help it!”
I stayed up to watch the Pats beat the Chargers. It was a good game, which is annoying because if it had been a blowout I would have been able to go to bed.

Weekend was busy enough –
Friday night we worked on getting something out of the freezer – it was turkey soup night.
Saturday – had lunch with Ramaho, who was back up in the ‘hood for a few hours, then to a Christmas gift regifting party. Allan was working, so I got Mindy to go to Canton with me. I got nothing good gift wise, but did get some kitchen mitts & pot holders that will be used. The rest will go in my pile to be regifted back again next year.
Sunday Allan slept all morning – they were up all night with calls – then watched football & decided to go to Schoolhouse to get a beer & another punch on the not dry January card. I think there were more kids than adults there yesterday afternoon. But – we were far enough away from them, it wasn’t a huge deal.
Sorry I couldn’t join you at Schoolhouse Barb. I did enjoy meeting my buddy Chip for cheap beer at Ideal Sportsbar, even if I continued to ignore the sports.

We spent Friday and Saturday shopping for cabinets countertops and tile then clearing out the kitchen. We have way too much crap, thankfully are sending a nice pile of stuff to Goodwill. Contractor shows up on Wednesday to start the new kitchen project.
I watched more football this weekend than I ever have before, GO BEARS!!

I’m a closet Bears fan, there is normally nothing to cheer about so I stay pretty quiet about it.
We hired a contractor that has done work in my neighborhood for almost 20 years. He knows these houses well and does some really good work.

We did, and it is so crazy how wide the range is on price. I have seen them between $100 and $700. It is just a faucet, what the hell is worth $600 more?

Getting a lot done but mildly annoyed at myself. I’m trying to resurrect an old computer (Christ on a bicycle it’s slooooooooooooooow) but couldn’t find its power cord. Seriously?!?! I recall buying one online to replace the one that mysteriously went bad on my tire inflator, but can’t find it. I found a cord that maybe the one I bought, but if it is, I bought the wrong cord.
Life goes on…
Maybe I’ll drive up to Microcenter tomorrow, which is ridiculously close to Schoolhouse where I can drink BOGO tomorrow since I’m a member! 😀

Lunch today was a modified dish of nachos. Recently I started using the broil function of my air fryer (my 1950s oven’s broiler isn’t good) and it’s been a game changer!
I have to see if ours does that.
