Another unsatisfactory potential pot luck dish, a modified version of an Avocado Lentil Salad. The salad itself wasn’t bad, but I don’t think it’s great candidate for a party.
I realized last night that I keep making these aphrodisiac-laden meals and have no one with whom to share the “benefitsâ€. 😉
In other news, I joined the InstantPot cult yesterday.
Why is it not a candidate for a party? It looks delicious.
It was too messy for a “partyâ€, or even for a sit-down potluck dinner. I also wonder how the avocado would hold up over the course of the evening. Oh, and my rendition wasn’t as photogenic. 🙂
I’m thinking of going back to the beet patties, or making a stuffed mushroom platter.
I am pleased that making these dishes is expanding my vegetarian meal preparation game, however.
I think the avacado would turn brown before you got to the party, unless you chop it there, which would be a non-starter for me. I’ve been looking askance at the InstaPot set. I’ll be interested to see how your experience goes.
Keep following your current trajectory that you’ve embarked on as of last and I’ll bet you’ll find someone. As Stephen Covey, said, with regard to many aspects of people, “Fast is slow, and slow is fast.” It all starts with being happier with one’s self, which you seem to be attaining as of late.
While I won’t turn this into an InstantPot blog (many exists, as do YouTube channels) I am certain that I will be posting recipes and photos here.
For inquiring minds I bought a six-quart, nine-function, InstantPot DUO.

I got the hard sell for the Instant Pot this past weekend. I’m sure I’ll get one soon enough.
Slept in, so getting a late start on the road trip. Leaving at 10am you’d think traffic would be much better, but it still was enough of a pain.

Funny, in Raleigh I considered becoming an Echo (Alexa) owner. I have many use cases, but don’t know where I would put it/them, or if I want a permanent connection to Amazon in my house.
I have now eaten four delicious meals made in InstantPots, which is why I pulled the trigger.
I like the speed of cooking idea, as I don’t plan ahead enough anymore & then we eat crap or eat out.
But Allan hates a pressure cooker (growing up everything tasted the same he says). But im sure I will get one sooner than later
